I looked through my recipe box this past weekend and found two quick and easy ones I believe you will enjoy.

The first one is a grown-up version of Sloppy Joes, called Sloppy Joe Casserole.

The original recipe lists ground meat as the protein source, but you can use ground turkey, chicken or sausage.

You also can be creative with the type of cheese you use. Pepper jack would be great!

The second recipe is Deluxe Nachos. It's great for an anytime snack or for a quick-fix supper, when you really don't know what you want to eat.

This one also uses ground meat, so you can use whatever type you like or have on hand.

Sloppy Joe Casserole

Supplies:
8-in.-square baking pan (2-in. deep)
Large skillet
Wooden or plastic spoon or spatula
Wax paper or plastic wrap

Ingredients:
1 can crescent rolls (any brand or type)
1 1b. ground meat
1 pkg. sloppy joe mix
1 (8-oz.) can tomato sauce
1 cup of cheese

Directions:
Preheat oven to 350 degrees.
Divide crescent rolls into halves; use half for bottom crust and half for top.
Place half of dough into a baking pan and spread with fingers to fit the pan.
Brown meat and drain; add Sloppy Joe mix and tomato sauce, stirring to combine.
Pour into pan on top of crust, spreading with a spoon; sprinkle with cheese.
Put the remaining half of dough onto a piece of wax paper or plastic wrap and spread out with fingers to the size of the pan.
Flip over the top of the pan, carefully removing the paper or wrap.
Bake at 350 degrees until golden brown.

Deluxe Nachos

Supplies:
Large skillet
Wooden or plastic spoon
Knife
1-cup liquid measure

Ingredients:
1 lb. ground meat
½ chopped onion or 1 tablespoon dehydrated onion flakes
1 (4-oz.) can chopped green chilies
1 pkg. taco-seasoning mix
2/3 cup of fat-free Half ‘n' Half or canned evaporated milk
8 oz. Velveeta cheese, thinly sliced
Tortilla chips

Directions:
Measure 1 tablespoon dehydrated onion flakes, if not using a raw one, and put into 2/3 cup of evaporated milk or Half ‘n' Half to rehydrate.
Brown meat and onion, if using raw onion, in skillet; drain.
Add taco-seasoning mix, following directions on package.
Place cheese slices on top of meat mixture, stirring after it starts to melt.
Add other ingredients, stirring thoroughly.
Heat until hot and bubbly, stirring often.
Spoon over your favorite tortilla chips and enjoy.
If you like your chips warm, just put your plate of nachos into microwave and heat for about 25 seconds
