I looked through my recipe box this past weekend and found two quick and easy ones I believe you will enjoy.

The first one is a grown-up version of Sloppy Joes, called Sloppy Joe Casserole.

The original recipe lists ground meat as the protein source, but you can use ground turkey, chicken or sausage.

You also can be creative with the type of cheese you use. Pepper jack would be great!

The second recipe is Deluxe Nachos. It's great for an anytime snack or for a quick-fix supper, when you really don't know what you want to eat.

Student Government Association members passed a motion at their Feb. 25 meeting to purchase two new microwave ovens for the Business Administration Building.

SGA treasurer Andrew Barnson, who made the motion, explained why the organization was replacing one broken microwave with two. Barnson said because so many students eat lunch and dinner there, he saw a need for two microwaves.

My 16-year-old, 25-inch Sony TV went on the fritz in January after it made a loud popping noise.

The picture quality afterward had a greenish hue and the sound crackled with static.

I had been longing to own a new high-definition, flat-screen TV, so I wasn’t particularly upset by my old model’s timely demise.

I was sure a 31- or 32-inch set would fit easily inside my entertainment armoire, the focal point of my living room.

Student Government Association members elected Senator David Kelley as their new secretary.

Kelley and two other nominees vied for the position in a special election on Feb. 11.

He is a senior human resources development major, a member of the Student Government Appropriations Committee, and an SGA senator since August.

Each nominee addressed the assembly on why they would be a good choice. "I'm not only a qualified nominee," Kelley said, "I'm also very acquainted with the responsibilities of the office of secretary."

Hattie's Recipe Box

Hi, readers. Welcome to my recipe box.

I have had many requests for more recipes since I began my Meals, munchies and more column last fall.

The Talon staff and I have created this special online column to accommodate those readers hungry for more recipes.

I guarantee each published recipe to be one I have chosen from my own personal recipe collection compiled over the past 35 years.

Each recipe is going to be one I especially like and have prepared more than once.

It’s Feb. 12, our snow day—woohoo!
I don’t believe I’ve seen this much snow since the winter of 1982 when I was pregnant with my first baby.
I’m wearing sweats, a hoodie and bundled in a throw trying to keep warm as I write this column.
The temperature is 31 degrees outside and a chilly 57 inside.
Why so cold inside you ask?

Student Government Association senate seats are currently vacant including the secretary’s. SGA president Amy Whitehouse said there are currently only 14 of 26 senate seats filled after Mikal Huff abruptly resigned as secretary Feb. 1 via e-mail.

Huff told the Patriot Talon he needed to devote more time to his 15-hour course load. “I learned a lot from being secretary and had fun doing it,“ he said. “I would recommend it to anyone if they can manage the time.”

Welcome back, readers!

I hope everyone had happy holidays as I surely did. (Oops! I can hear my daughters now saying, "Don't call me Shirley," a line from the movie Airplane. It's one of our little inside jokes.)

One of my columns last semester recounted my family's Thanksgiving feast, which has become a much-anticipated annual affair. I even shared two of our must-have recipes.

Something I failed to mention is we prepare this same menu for Christmas Day as well.

Students may get what some say is a much-needed study break before finals if University officials decide to add one or two dead days’ to semester schedules.

Student Government Association president Amy Whitehouse and vice president Sara Khalifa proposed the addition to the Faculty Senate at a Jan. 15 meeting.

Christmas is only 18 days away, and I haven’t begun my shopping yet!

It’s not that I don’t enjoy shopping because I really do. In fact, my kids have nicknamed me Discount Diva for my innate ability to find a bargain.

I’m proud to proclaim my excuse this year is a lack of free time due to an over-abundance of homework.

How many 55-year-old women do you know who can make that claim? LOL!

The University’s chapter of the American Chemical Society is sponsoring a magic show on Nov. 21 for the Azleway Boys’ Home Wilderness Camp of Athens.

The event is scheduled to start at noon in Room 2024 of the Ratliff Building South. “Seven to 10 members will demonstrate science experiments and also explain the science behind them,” President Jason Myrick said.

Well, I’m still perched atop my soapbox airing my dirty laundry – hints, that is. I’ve already talked about stain removal, but there is so much more to dirty laundry in general. So here it is, dirty laundry: the sequel.

It was a hot, mid-July afternoon when I decided to venture out into the booming metropolis of Euless to do a few loads of laundry for my daughter Tracie, who was convalescing from emergency surgery.

Doing laundry is a lifelong chore as it never ends. It's not a gender-specific chore, meaning it's not women's work, despite what you may believe. Everyone creates dirty laundry therefore everyone should know how to clean it.

I taught my two daughters, Ashley and Tracie, when they were young girls. Learning to fold hand towels and washcloths was fun for them at age 2. They loved being mommy's little helpers and doing this chore gave them a sense of responsibility, and self satisfaction in their accomplishments.

Deciding what to eat for dinner is a daily dilemma we all face.

Packaged macaroni and cheese and the ever-popular Ramen noodles, staples of the average college student’s diet, are cheap and easy to prepare but not very nutritious and can become very boring.

On the other hand, eating out and buying frozen pre-made meals can be quite expensive.

Two-year-old Hayes Hamman may not understand the possibilities associated with mechanical and electrical engineering, but he is already testing the limits.

Dr. Michael Thrasher, the new director of School of Performing Arts, said he envisions the University as a future leader of music education in the East Texas area.

He said he wants to elevate the University’s status to “regional leader, in other words, the school of choice.”

I’m not the typical college student and I’m not your mother, but my life experiences as a wife, a mother, and a stressed-out college student can benefit those in need — my fellow classmates.

Since I’m a journalism student as well, I plan to use this column to pass along recipes for easy to fix healthful meals, household and shopping hints, and, well just whatever. What better way to begin that with breakfast ...
